It is with some pride that I have produced The Hopper Man’s Easy Curry Cookbook. It fulfils a lifelong dream to share my favourite curry recipes with those with a similar taste for exotic spices and flavours. Born in Sri Lanka (Ceylon) to Dutch Burgher parents but living most of my life in Australia, my introduction to the spectacular variety of curries was slow. But thanks to my father’s love of all things Ceylonese, its friendly people, exotic countryside, occasionally deadly wildlife and spicy foods were all very real to me from a young age. As a caterer and cook for many years, using “The Hopper Man” moniker, I have further developed a love not just for curries but the many varied accompaniments that are so unique and special. Obviously, for those who know of ‘hoppers’ with their lovely fermented rice and coconut milk aroma, they are my speciality and passion, and if you don’t know, well, that’s just another great reason to read and enjoy this cookbook. Well over a million people of Sri Lankan origin live outside South Asia.
