Niks kitchen is a compilation of Puan Sri Nik Esahs recipes which are mostly traditional Kelantanese cooking. This book will serve as a guideline for future generations who plan to organize functions as successfully as their foremothers. Whether its the Queens Menu (highlight of the Majlis Santapan Diraja), Kuzi (from the Arabian shores to South East Asia), Nasi Dagang (State food of Kelantan) or Nasi Tumpang (travellers favourite) each menu is a complete feast in itself- from condiments to main dishes and dessert.
Although most of the entries were contributed by the Puan Sri Nik Esah and her family, the introduction to the menus, the history of Kelantan and its cuisine were written by Hezreen Abdul Rashid.
